TIPS using the Manna from Anna Bread Mix
- Convection ovens are not recommended.
- For oven method, use heavy weight non-stick loaf pans. Glass and aluminum are not recommended.
-If you are using the corn and dairy free mix in the bread machine a dark crust setting will give the best results.
- Always store Manna from Anna mix in a cool location if it will be a while before you use it (mix has a 2 yr shelf life). Do not store in the refrigerator or freezer; a cupboard away from the heat of an oven is best.
Review instructions on package carefully and have all the wet ingredients measured out in advance. Also gather any equipment in advance and have prepared, ie, bread loaf pans lightly oiled and dusted with rice flour.
- EGG REPLACER: Many customers have had great success replacing egg with this simple fax seed formula: 3 tablespoons finely ground flax seed (grind in a coffee grinder) with 9 tablespoons of boiling water--let set for 15 minutes, then stir and add to other wet ingredients.
- If using a bread machine also gather equipment and wet ingredients in advance. It is also critical to put ingredients in proper order, wet in the bottom of the baking pan and dry on top. Use a one-rise cycle on your bread machine.
- Mix will render two very adequate sized loaves if using the two smaller bread pans and is recommended. If using a single loaf pan, the mix will render a very large loaf of bread.
- When letting bread rise, make sure location is not too warm, do not rise inside a warm oven. If the bread is forced to rise in too warm an environment, it can create large air pockets and not bake correctly. If the area the bread is placed in is too coll, it will take a very long time to rise. The back of the oven generally works very well.
- ALWAYS use large eggs. If the large eggs appear small and the whole egg and two egg whites do not equal between 2/3 to 3/4 cup, either add an extra egg white or use jumbo eggs.
- Bread will stay fresh for 2 to 3 days. To store for longer periods, slice and put into a plastic freezer bag and keep in the freezer. It's best to slip pieces of wax paper between each slice to make it easier to pull apart. Pop in the oven of toaster to refresh.
RECIPES
Pizza Crust
- Heat oven to 400
- Manna from Anna will make two large pizzas when using two large cookie sheets (9½ X 14½) or one large pizza pan.
- Place a sheet of parchment paper on cookie sheet. Lightly grease.
- Prepare the mix with a heavy duty mixer following the package instructions for the "oven method." After it is mixed, spread half onto each cookie sheet. Oil your hands to spread.
- Once batter is spread out, let stand for 15 minutes in a warm location, lightly covered with foil, plastic wrap or waxed paper.
- Place in 400 degree over for 10 minutes.
- Crust will puff up, but as it cools will flatten out. Once cooled (20 min), add your choice of sauce and toppings. Bake for 25 min.
Hamburger Buns
- Heat oven to 375.
- You will need a bun pan or large empty cleaned tuna cans with both ends cut off.
- Lightly grease inside of pan or cans. If using cans, set on greased cookie sheet.
- Make mix using oven method.
- Spoon bread mix in pan/cans half full.
- Let rise until double (about 45 min).
- Bake for 25 min, cover with foil to prevent too much browning.
